Brewpub Ozone temporarily opened at the end of March 2021, and since its full-scale opening in October, it has been offering craft beers from various regions, including "Ozone Beer" made at the brewery in the store.

Brewpub Ozone operated by Wappa no Kai
Brewpub Ozone is operated by the NPO Wappa no Kai. Wappa no Kai is an organization that develops various projects mainly in Ozone with the aim of enabling all people to live and work together, regardless of whether they have disabilities or not.
Brewpub Ozone opened at the end of March 2021 as part of the "Shopping Street Revitalization and Tourism Consumption Creation Project" led by Wappa no Kai.
Inside the store, you can see the brewery through the glass, so you can see how Ozone Beer is made.
There are three main types of beer brewed at Brewpub Ozone. In addition to these beers, there are carefully selected domestic and foreign craft beers in the store, so you can always enjoy about 10 kinds of beer.
The concept of the shop is "a shop loved by local people". The theme is to make beer that the staff and people of Ozone shopping district can be proud of. Brewpub Ozone, which attracts not only locals but also craft beer lovers, is likely to become a hub that connects various regions and people.

Brewpub Ozone started serving beer brewed in the store from October 2021. At first it was one type of KENZO IPA, but after that there are three types. Based on these three types, they increase the number of beers according to the season, and they also make collaboration beers with other companies and shops. The three types of beer are also sold in bottles, and are wholesaled to restaurants and liquor stores in Nagoya.
Mr. Matsumoto, the brewmaster, jumped into the world of beer brewing with no experience at all for Brewpub Ozone. He trained at Ryogoku Beer Institute in Tokyo before setting up his own brewery. Because of his inexperience, he says that it is important to be very careful and faithful to the basics, and to control the temperature thoroughly.
Matsumoto: "No matter how particular we are about the ingredients, the taste of beer can change dramatically with just one temperature control. That's why every day is a challenge. We haven't been serving Ozone beer for very long, but I think that's why you can enjoy the process of taste change and evolution. Together with our customers, we want to find and nurture the taste of beer that can only be served at Brewpub Ozone."
The three Ozone beers brewed at Brewpub Ozone are KENZO IPA (IPA), Future Trees (Pale Ale), and POP EYES (Hazy IPA). Here are each of them, starting from the left of the image.
① KENZO IPA: A classic IPA with a bitterness and sweet aroma of citrus aroma hops, but with a strong malt aroma and sweetness. It is refreshing and easy to drink, and goes well with spicy sausages.
②Future Tree: An English pale ale with a rich malt flavor. It has a low alcohol content and a moderate bitterness, so it is recommended for craft beer beginners. As the temperature rises, the aroma of malt and hops becomes more gorgeous, so you can enjoy the change in taste and aroma.
③ POP EYES: Also known as New England IPA, it features an overwhelming hop aroma and turbidity. It has a fruity and juicy flavor and aroma, and is not bitter despite being an IPA.
In addition to these, they are currently collaborating with a coffee bean store in Aichi Prefecture to make a coffee-flavored stout (black beer). In the future, they are also ambitious to make beer to support professional sports teams based in Ozone and Nagoya.
Brewpub Ozone is also friendly to craft beer novices. The staff started with no knowledge of craft beer, so they understand how people feel when they find craft beer a hurdle. The store has a chart showing the types and flavors of beers. They have an atmosphere where you can feel free to ask questions you might hesitate to ask, such as "What's an IPA?" "What is the difference between Hazy IPA and IPA?"

Brewpub Ozone is also attractive for its sausages, which go perfectly with beer. The special barleywine brusto, in particular, is spicy and kneaded with KENZO IPA, so be sure to try it with KENZO IPA beer.
Brewpub Ozone is also characterized by using things that are kind to the body, such as handmade sauces used for cooking and carefully selected seasonings such as oil, salt, sugar, and soy sauce. Wappa no Kai has a farm on the Chita Peninsula, where they grow rice and vegetables using no pesticides or organic fertilizers. Brewpub Ozone also uses seasonal vegetables and additive-free bread (wappan) made by Wappa no Kai. Among Wappa no Kai, it is also a big attraction that a sustainable cycle has already been realized.

Wappanokai is developing a number of businesses based at Ozone with the aim of creating a society in which all people, regardless of disability, can live and work together. These include the cultivation of pesticide-free and organically fertilized rice and vegetables at the farm it operates, the production and sale of domestic wheat and additive-free bread (Wappan), a recycling business, employment support for people with disabilities, and the operation of a brewpub Ozone.
In particular, they are focusing on the recycling business, and are working to realize a "regional recycling society," such as purchasing resources generated by households and composting food waste.
Brewpub Ozone was born as part of the Ministry of Economy, Trade and Industry's "Business to revitalize shopping districts and create tourism consumption." However, under this plan "Yume Wappan" that sells bread made from pesticide-free wheat is also scheduled to open at the same time. It will be opening in this Spring. I'm looking forward to seeing another gourmet spot in Ozone.
Mr. Saito, the representative of Wappa no Kai, said, "In the future, we will make beer with barley cultivated at the Wappa no Kai farm, and use the beer lees after squeezing the wort as compost and feed. Many breweries treat beer lees as industrial waste, but they can also be reused. We are already working with businesses that are developing agriculture, so Using lees as feed seems like a realistic line.” It's a beer that's friendly to both the environment and people.
