"We want local people to enjoy delicious bread!"
KANIE Bakery is a store that directly sells bread made at KANIE Food Service's factory. KANIE Food Service produces and sells freshly baked and frozen bread to famous hotels, restaurants, wedding halls, and high-end supermarkets in Nagoya and throughout Japan. Originally specializing in wholesale, we opened KANIE Bakery in 2018 with the idea that since we make such delicious bread, we want people in the community to enjoy it.
Initially, the direct sales store started out in a small space with only a bread display case and a cash register. Gradually, its reputation spread through word of mouth, and the number of customers increased, and after two renovations, it underwent a major renovation in June 2024.
The new store has a much larger sales area, a kitchen that serves freshly made curry bread, and a space where you can see the factory through glass, and the charm of a direct sales store is apparent everywhere.
The concept is "a fusion of old and new." A stylish space where history and modernity intertwine.
For the renovation in June 2024, the space that used to be a factory will be utilized under the concept of "fusion of old and new". The interior has a gentle atmosphere with wood and warm-colored light bulbs, but also has a rugged factory-like feel. Items that remind us of the company's history are placed here and there, such as the flour mill used at the time of the establishment, the stacks used for storing bread, and the racks used for loading wheat.
Another great feature of the bakery is that it is connected to the factory through glass, allowing you to see up close how breads are carefully handmade.
The small doors at the foot of the entrance and outbuildings can be opened by anyone, and there are cute animals lurking inside for fun. There are many ingenious features here and there to make the purchase not only fun but also exciting. This is a point where even small children will enjoy coming along.
A long-established company that has been in business since the Meiji era takes pride in baking
At KANIE Bakery, there are over 70 types of bread on offer every day, and on some days as many as 100. They don't just make bread for companies, they also try to find out what their customers want through trial and error.
There is a wide range of breads available, from simple items that can be served with meals, such as loaves of bread and rolls, to prepared breads and curry breads made in collaboration with popular Nagoya companies.
Kanie Food Service has inherited its history since its establishment as a flour mill business in the Meiji Era. Today, we produce and sell high quality breads that are recognized by top hotels and restaurants. A key feature of our products is that we use wheat that has been milled within 40 days of the date of milling, utilizing the know-how we have cultivated in the flour milling business.
The wheat used is the highest grade brand from Canada, and high refining technology is used to extract the nutritious wheat core; KANIE Bakery's bread is full of wheat aroma and flavor.
Another appealing feature of the bread sold at KANIE Bakery is that it is made using a process that does not lose its flavor even when frozen. When rebaked in the microwave or oven, they have the same aroma and taste as if they were freshly baked. If you buy a lot of bread and freeze it, you can enjoy as much bread as you want every morning, just like a buffet. The bags containing rolls and other breads for meals are also made of freezer film and can be stored directly in the freezer.
KANIE Bakery's kindness and dedication to "providing delicious bread to many people" is infused into every loaf of bread.
There are also many collaborative breads made with local companies and famous shops in Nagoya.
You'll also find breads that have been made in collaboration with familiar local companies such as Sugimoto, Gabri Chicken, Misen, and Yokoi inside KANIE Bakery.
Originally, the main lineup was simple breads that went well with meals, but the collaboration breads were born when the number of people eating out during COVID-19 dropped dramatically. When they started selling the bread because of the connection between companies that are loved by the local community, it was very well received by customers. With this renewal, the collaboration curry bread has also been newly launched.
Not only have all the operations of the curry buns been reviewed to ensure that they are freshly fried, but the dough has also been developed one by one to match the filling (ingredients inside). Yamamotoya's curry buns also feature a dough that is designed to harmonize with the unique fillings, such as sprinkling arare (rice crackers) on the outside to add a Japanese flavor, or using croutons for the Misen.
The collaboration bread is so popular that it tends to sell out quickly, so if you come across it, why not try them?
Recommended bread from KANIE Bakery
KANIE Bakery bakes a wide variety of breads every day, but here we will introduce some of their most recommended and popular breads.
Heidi Roll
White fluffy bread like the one in the anime "Heidi, Girl of the Alps". It is a popular item with many repeat customers. It is characterized by its slightly sweet and chunky dough, and you can eat it every day without getting tired of it. Baking the surface until golden brown makes it crispy and fluffy.
It's moist and chewy even when eaten as is! It's a versatile bread that can be paired with any meal.
KANIE bread (1.5 loaves)
Additive-free bread is one of KANIE Bakery's signature products. It is baked in a stone oven using the hot water method, in which dough is kneaded in boiling water at 100 degrees Celsius, and a lot of time and effort is put into baking.
Toasted and topped with butter, it's irresistible! If you come to KANIE Bakery, this is a dish you should try at least once.
Homemade brioche rusks
Usually, rusks are made during the process of making French bread, but Kanie Bakery's rusks are made using the same brioche bread that they deliver to famous hotels. Therefore, their light and crispy texture is their main feature.
It is sprinkled with Okinawa's specialty cane sugar and has a fragrant wheat flavor and gentle sweetness that will make you want to keep eating.
