All types of bread are baked around noon. Inside the clean store, there are always more than 40 types of bread, including standard bread and seasonal bread.

The Pan noritake produces popular breads with impact. We spoke with Ms. Iwata, the manager who supports the chef and is in charge of the store.
– Please tell us how you got involved in this work.
Ms. Iwata: “There used to be a different bakery in this place. When the owner heard that the bakery was closing down, he decided to take over that relationship and start a new bakery. That's when I was invited as a registered dietitian, and the chef joined us.
Until then, both the chef and I had jobs unrelated to the bakery industry, so we were self-taught. Anyway, I wanted to make delicious bread, so I was particular about the ingredients, and through trial and error with the owners, I made it again and again until it was delicious enough to satisfy everyone. At first it was just plain bread. ”
– What do you focus on when making bread?
Ms. Iwata: “The most important thing is to be very particular about the ingredients, and to use safe, high-quality and delicious ingredients.
Flour is also carefully selected from a large collection of good flours, both domestic and from around the world. We change the formulation in the smallest increments, make several prototypes and repeat tastings, and never make compromises in order to make it taste good. Even with the same dough, we change the formula according to the ingredients. Both the dough and the ingredients are carefully made with a lot of time and thought."
-What is the concept of "the PAN" and what do you value?
Ms. Iwata:"To insist on using good, safe ingredients and to make bread that is more about taste than appearance. And to pay attention to customer service and get to know our customers by talking with them."
Ms. Iwata:"We are able to make bread with bold ideas because we all started from scratch, so we are not obsessed with being artisans and we are not bound by common sense. We only make bread that we all think is delicious. That's why it's hard to come up with new products (laughs)."
