The most popular item is the "baguette," which takes two days of long-lasting low-temperature fermentation to prepare. The "bâtard" is soft and moist on the inside. Both breads are simple and delicious, so you will want to eat them with soup, cheese, ham, or any other meal. They are also recommended for sandwiches.

The "campagne" made with homemade yeast has many repeat customers. The natural yeast made from raisins is very popular for its "cacao-like aroma" without sourness.

Quiche ¥400 (tax included)

This quiche changes monthly, with ingredients changing according to the "best season" of the ingredients. The quiche is stuffed with seasonal ingredients to create a rich filling. “Arabiki Sausage Baguette” is popular among people of all ages. They use a whole arabiki (coarse) sausage from Tottori, Oyama and wrap it in baguette dough. It's a simple combination of bread and sausage, but the crispy texture and fragrant baguette dough go well together.

"Snake" is popular among children. Soft Danish bread made with croissant dough. The sweetness is modest and the scent of butter is rich.

Ms. Hayashi told me a heartwarming episode.

A boy who was in the hospital and could not eat anything was able to eat only this Hakuban. His parents came to buy them every day while he was in the hospital, and even now the boy comes back to buy them. The taste of these white breads is so gentle. This episode is possible because we can talk with customers in a face-to-face setting.

Galette des Rois ¥620 (tax included) *January only

Their menu changes with the seasons.

Galette des Rois is a traditional French pastry essential for New Year's celebrations. Inside is a single baked item called a "fève. It is said that the person who wins the fève by cutting it into pieces will become a "king (princess)," wear a crown on that day, be celebrated by everyone, and live happily for the rest of the year.

Here, chestnuts were used instead of feve. It's nice to be able to enjoy these seasonal breads.

During the interview, it was impressive to see Ms. Hayashi saying "Welcome!" and "Thank you" in a louder voice than anyone else when a customer came. “I want to make the store closer to customers,” she said about her future prospects. I was convinced that Ms. Hayashi could make such delicious bread because she is straight forward in making bread and puts her heart into her bread.
