We make many breads every day, but our customers buy only one. That is why we put our heart and soul into each and every one of our breads. I want to eat it again. We are always trying to find the best way to make our customers want to eat our bread again."
Ms. Hayashi: "Dough is in different conditions every day. Therefore, we change the kneading of the dough according to the season and temperature. We also choose the right ingredients, such as wheat and butter, for each loaf. For example, foreign wheat makes the bread crispy, while domestic wheat makes it moist and chewy. Even if the same recipe is used, the difference in wheat makes a completely different product. The beauty of handmade bread is that you can choose all the ingredients yourself.
