Now that the "3rd donut boom" has arrived, it seems that the number of donut specialty stores is increasing. The taste and texture varies depending on the shop!

KIMA KIMA COFFEE & DOUNUTS, located in Chikusa ward, Nagoya, is a shop where you can enjoy donuts made with natural ingredients and delicious coffee. We asked the owner, Mr. Yukihiro Takahashi, what kind of donuts you can get here.

A Slightly Different Space in a Residential Area

"KIMA KIMA COFFEE & DOUNUTS" is located in Furudeki, Chikusa ward a little away from the hustle and bustle of the city. It is a 12-minute walk from Ozone Station and Nagoya Dome Mae Yada Station.

It is right in front of the "Kodekicho" bus stop.

When you enter the store, you will be greeted by freshly fried donuts in a showcase.

You can of course buy for to-go, but you can also have it in the store where you can relax.

This store, which opened in January 2022, has a store design that is conscious of "a slightly different space in a residential area." It is said that the design is simple so that the color of the store itself does not come out too much.

Gentle light pours in through the large windows, and benches line the walls.

Add a Positive Feeling to your Daily Life with Delicious Donuts

The concept is "a little good thing in everyday life". We hope to create a natural feeling of "It's delicious, I'm coming back again!"

Mr. Takahashi manages everything from production to customer service by himself. In the past, in addition to Starbucks coffee, he seems to have experienced work other than restaurants. Such experience is reflected in "KIMA KIMA COFFEE & DOUNUTS".

Ms. Takahashi: “The reason I opened this store was because I had a strong desire to create my own brand and store while gaining various experiences.

I decided to serve coffee first. After that, I thought about what to do with coffee, and made donuts that I could enjoy pairing. You can easily eat it with one hand and enjoy various flavors. I hope that a wide range of people, from children to the elderly, can enjoy it. ”

It seems that he also worked on interior miscellaneous goods, so he also sells miscellaneous goods that are easy to use everyday.

Mr. Takahashi's son is said to be the godfather of the impressive store name.

Mr. Takahashi:"When we were thinking of a name for the restaurant, my son said, "Kimakima," out of no where. It's easy to remember and the sound is cute, so I just decided on it (laughs)."

The story of Mr. Takahashi and his son, who laughed and talked about it, made me unconsciously feel at home.

Discerning Donut which Repeated Trial and Error

There are 10 standard donuts and 1 limited edition donut. The dough prepared the day before is left in the refrigerator, and fried donuts are lined up in the morning of the next day.

Mr. Takahashi:"We are particular about selecting ingredients that are natural, uncolored, and have a natural sweetness so that even children can eat them with peace of mind. We have reduced the stimulation of sweetness as much as possible and finished it with a taste that you will want to eat every day. There are no preservatives, so please eat it on the day of your purchase."

Mr. Takahashi says he is self-taught when it comes to making donuts. It seems that it took a lot of time to make the dough.

Mr. Takahashi: “It took about a year of repeated trial and error to create a satisfactory donut, including the type and composition of flour. The flour used is a secret, but we carefully select the best ones. Strong and soft flour are blended, and the combination is important.”

It is an original recipe that uses three types of dough, plain, cocoa, and matcha, and matches each flavor.

Mr. Takahashi:“When you think of donuts, you probably think of them as fluffy and airy, but ours have a dense, chewy texture.

The texture is moist, and the oiliness is minimal, giving it a refreshing taste. I wanted to make it crispy, but I devised a balance between strong flour and weak flour and selected oil so that the oil would not penetrate. ”

Sticking to additive-free donuts with a chewy texture. Mr. Takahashi gave us some recommendations.

Original donut 242 yen

First of all, the most popular original donut. Simple taste with vanilla-flavored syrup. Because it is simple, you can fully enjoy the original taste of the dough.

When you take a bite, you will be impressed by the chewy texture! The dense dough gives you a satisfying feeling as if you were eating a bagel.

lemon donut

Lemon donut 286 yen

A refreshing lemon donut with lemon juice added to sugar. The sour taste of lemon and the moist milky dough are a perfect match, so it's even recommended for those who don't like sour foods.

The pistachio topping adds just the right amount of flavor and texture.

chocolate nut donut

Chocolate nut donut 341 yen

A donut with cocoa dough, bitter chocolate with less sweetness, and salty cashew nuts. You can enjoy the texture of tightly packed dough and nuts.

"It's not as sweet as it looks" says Mr. Takahashi. All of the doughnuts are satisfying, but I ate them very quickly because I didn't feel greasy after eating it.

In addition to the donuts introduced this time, limited time donuts are also popular! "Raspberry crumble donut" was lined up on this day.

Enjoy Pairing with Coffee!

For coffee that goes well with donuts, there are 1 house blend and 6 to 7 types of straight coffee from each production area. All of them are centered on dark roast so as not to lose to the existence of donuts.

A cup of house blend coffee that mixes the purchased coffee beans at the shop. It is easy for anyone to drink and is characterized by its bitterness and rich taste. Of course compatibility with donuts is perfect!

Straight coffee is hand-dripped and brewed after an order is placed.

A drink menu that makes use of the knowledge and experience that worked at Starbucks Coffee. For those who can't drink coffee, there are tea lattes and juices.  They set reasonable prices for kid's drinks so that customers can purchase them without hesitation.

They also have seasonal drinks. Hot drinks are mainly served in winter.

I want to Deliver Delicious Donuts and Coffee
 to Many Customers

One year after its opening in January 2022, KIMA KIMA COFFEE & DOUNUTS has steadily captured the hearts of customers. Originally there were 6 types of donuts, but now there are 10 types. It used to be closed on Saturdays and Sundays, but recently it has changed to Sundays and Mondays.

Mr. Takahashi says, "I want to deliver to more customers," while responding to his positive feelings and customer feedback. I can't wait to see what kind of donuts will be born in the future!
