"Gyoza New Fushimi" is a sister store of "Gyoza Mania", a gyoza specialty restaurant that was selected as a Michelin Bib Gourmand.

The signature dish is the exquisite gyoza, which is made by kneading the dough and filling the dough after receiving an order. The owner has faithfully reproduced the taste he fell in love with in Beijing, China. He learned the basics of how to make these dumplings from local people and created his own original recipe.

The secret to their popularity is the “freshly wrapped” dumplings, which are made by stretching the skin after receiving an order. The home-made skins that have been aged are used separately for grilled gyoza and boiled gyoza. The sight of craftsmen cooking in an open kitchen will further enhance your travel mood.

We started with vegetables recommended by the staff. The freshly wrapped dumplings have a chewy skin! You don't even need to put anything on the dumplings, as the umami flavor spreads through your mouth. The crispy, chewy homemade skin is a perfect match with the sweetness of the vegetables. You can eat as many as you want.

First of all, "Yaki Reimen" (baked cold noodles) recommended by the staff. First of all, I was surprised by the visual that is completely different from Japanese cold noodles. Yaki Reimen is a sheet of cold noodles wrapped in egg and baked. 
It has salty-sweet sauce. When you take a bite, you'll notice the chewy texture unique to that cold noodle. Strangely enough, we couldn't stop eating it.
