Chef's recommended dishes
Let us now introduce some of the dishes recommended by the owner, Mr. Ushijima.
Speaking of Haretoki, this is it! Specialty "Taki-gyoza"
Haretoki's specialty, "taki-gyoza", is always requested by visitors. Over the past few years, it has slowly gained popularity as a new specialty of Hakata.
At Haretoki, the dumplings are prepared from the skin with a unique formula that took 7 to 8 years to develop, and then cooked all at once in a rich broth slowly simmered with chicken stock. The red yuzu kosho (yuzu citron pepper) gives the dumplings a different taste.
The skin is very chewy, and even if you pick it up with chopsticks, it won't fall apart easily. It is said that there are many people who are asked to finish the meal with this dish after drinking alcohol. After eating, you can enjoy as champon (dish of noodles with seafoods and vegetables)!
Direct from Kumamoto Aso! Horse sashimi "Assortment of three kinds of specialties"
“Basashi” is also a must-try dish. Horse meat is delivered directly from Kumamoto and Aso. The special 3-kind platter includes 3 kinds of red meat, mane, and futaego.
In particular, the mane has a firm texture, but the sweet fat is irresistible. Please try it while feeling the difference in the parts!
Amberjack with Sesame Soy Sauce
Sashimi dipped in sesame soy sauce, a familiar local dish of Hakata. Enjoy fresh amberjack sashimi with plenty of special sauce and sesame.
The flavor of the sesame and the sweet sauce match the fatty amberjack, making for a great taste! This goes well with alcohol.
All fish dishes are served with the best fish procured that day.
Nagasaki Tsushima wild boar loin and fillet
This is another of Haretoki's standard menu items, "Nagasaki Tsushima wild boar loin and fillet." The Tsushima wild boars, which are directly delivered by Nagasaki Tsushima's skilled matagi (traditional hunters), are only sent after the blood has been drained, so they are very fresh without any smell!
Many people who have eaten wild boar are resistant to its distinctive smell, but Tsushima wild boar is so exquisite that it will change your concept of what it is. It is also highly nutritious and has fewer calories than pork or beef. The fat is not too fatty and can be eaten without hesitation.
Recommended by the store manager! "Special minced meat and green pepper"
Regular customers always ask for this menu. They have arranged the crispy green peppers, which are very popular at izakayas in Hakata. Raw green peppers contain special minced boar.
This was honestly shockingly delicious. The crunchiness of the minced meat and the crunchiness of the green peppers are addictive, and you'll likely end up eating more than one. No boar odor at all!
There is a wide variety of alcoholic beverages, including Japanese sake, shochu, and wine. Various types of sake are prepared for each season.
You can choose sake that goes well with the food, so be sure to ask the staff for recommendations!
At Haretoki, they are so particular about our food that we visit the local area to purchase the ingredients. Sometimes they even go fishing by themself. While valuing the thoughts and commitments of the producers, they offer dishes that carefully consider the season and each ingredient.
By all means, please visit and enjoy the exquisite Kyushu dishes!
