A bright and relaxing restaurant that feels like home.
"Ichito Sanbunnoichi" is located in a corner of the quiet rural scenery of Kota-cho. The white building catches your eye.
The stylish iron sign is a landmark! It is so particular about every detail that you will want to take a picture of it.
There are chairs for waiting at the entrance, and each one is very stylish! Since you take off your shoes before entering, you will be surprised at how comfortable it feels as if you were at home.
The restaurant has counter seats and tatami mats to accommodate a wide range of customers. From the tatami mat seats, you can see the rural scenery, which will soothe your soul.
This place was originally the home of Mr. Mizuno, the owner, and has been renovated.
The main attraction of the restaurant is the open kitchen, which is also the main part of the restaurant. The interior of the restaurant has a novel look that is not typical of an udon restaurant! You can taste delicious udon in a live atmosphere.
This is the second floor seating. It features a warm wooden space.
Bright sunlight pours in through the skylight, and the massive beams are impressive. Plants such as air plants are also displayed, giving the room a more cozy feeling.

Commitment to Sanuki Udon
Takuya Mizuno, owner of Ichito Sanbunnoichi, is the founder of Garyu, a Sanshu handmade udon restaurant in Nishio City, Aichi Prefecture.
- What made you decide to open at this location?
Ms. Mizuno: “This is where I was born and raised. We opened it because we wanted to propose new innovations to our customers.”
– It certainly gives the impression of a “stylish udon restaurant” like never before!
Ms. Mizuno: "I am thrilled to have stepped into something new, something that no one has done before, with a view of the landscape and river where I was born and raised. I think the place where people think it's nice is nature. Feeling the richness of nature heals the soul. I hope that by running an udon restaurant in this place, new things will keep coming into being."
- How did you come across Sanuki Udon?
Mr. Mizuno: "More than 15 years ago, I was so impressed by the authentic Sanuki udon I encountered that I continued my training. I wanted to spread this delicious taste to more people, so at Ichito Sanbunnoichi, we offer authentic Sanuki udon. We make all of our udon by hand, which is rare in Japan. About 25 kg (about 200 servings) are made by mixing flour (Kinuakari wheat from Aichi Prefecture) and salted water.
– The view from this noodle workshop is also wonderful.
Mr. Mizuno: "I work here every morning, and it's really relaxing. I make udon with love while looking out at the scenery. Every day the temperature and humidity are different, so I'm trying my best to serve customers. I want to continue making noodles that people will think are delicious.”
- What is your outlook for the future?
Mr. Mizuno: "I think Ichito Sanbunnoichi is a place where I can propose new concepts and added value for udon restaurants. To achieve this, the most important thing is for me to enjoy myself. Especially for udon restaurants, the traditional atmosphere is the norm, but I think it is good to have an udon shop where young couples can casually visit. I would like to continue to propose udon restaurants that convey a sense of excitement and entertainment."

Recommended menu!
“Ichito Sanbunnoichi” is famous for its “Tenmori Kamatama Udon” (1,628 yen). Enjoy the noodles freshly boiled in the pot with 2-round poring of dashi soy sauce.
Adding an egg makes it even more mellow. The chewy texture of the noodles is also attractive! By adding yuzu pepper, the taste changes even more. Please enjoy it with crispy tempura.
The number one item popular among women is the cold carbonara udon (1,298 yen). It is a cold cream udon that can be eaten quickly and easily. The thickly sliced bacon goes perfectly with it! The dish comes with risotto to finish it off, making it a perfect volume.
The point of this shop is that the children's menu is also substantial! This is the "sweet udon" (580 yen) that is popular with children. A set with lots of sweets that will make children's eyes sparkle.
New take-out drink. The owner's specialty café au lait (486 yen). Below is the "Mango Jelly Milk (594 yen)," which has an addictive jelly texture. It's recommend to add syrup for extra sweetness! Various other types of take-out drinks are also available.
