Alain, a design and construction company in Hamamatsu City, Shizuoka Prefecture, specializes in residential and store design, remodeling, and renovation. Since opening, they have produced many stores.

The 10th installment of our feature introducing shops created by Alain is the popular patisserie "Abondance" run by Chef Bernard from France.

This time, we will be introducing the appeal of "Abondance."

Alan

"Abondance" is located in Sumiyoshi, Naka-ku, Hamamatsu City, Shizuoka Prefecture. It is a shop with a sophisticated atmosphere and a distinctive blue exterior.

It is one of the most popular patisseries in Shizuoka Prefecture, and is so popular that customers from outside the prefecture come to shop on weekends.

The interior of the shop is unified in blue, and you can feel Bernard's good taste. It is designed to resemble a jewelry box, and the space is designed to make the cakes look beautiful.

The cake menu changes with the seasons, with over 20 varieties available. There are currently about 12 varieties of baked goods. You can also make reservations for whole cakes.

You can encounter many authentic French cakes that are rarely seen in Japan, such as baked goods that have been handed down for generations in the Alsace region of France, and sophisticated cakes prepared in Paris.

Nakane-san: "I met Bernard and his wife over 20 years ago. When they decided to open a patisserie in his wife's hometown of Hamamatsu, they asked Alain to help them.

The main focus was on the beautiful blue color that is Abondance's image color. Not only the exterior, but the interior of the store is unified in blue. To express this color, we worked with Mr. and Mrs. Bernard on a number of trial and error projects.

The store creates a special, exciting feeling from the moment you enter."

The owner and pastry chef, Eberle Bernard, is from Alsace, France.

Mr. Bernard is a veteran chef who trained at famous French restaurants such as L'Oler, Le Chandra, and Dalloyau, and has worked many times as the head of confectionery at famous hotels in Japan and France.

-What made you come to Japan and open a shop in Hamamatsu?

Bernard: "I was attracted to Japan when I was working at a three-star restaurant in France. There were seven Japanese people training there at the time, and I was so impressed by the delicacy and dedication of the Japanese people that I came to Japan.

The shop opened in 2002. After working as the head pastry chef at a restaurant in Hiroo, Tokyo, he opened "Abondance" in Hamamatsu, his wife's hometown.

Abondance is the Capricorn goddess who holds the "corne d'abondance" (horn of plenty) that grants all wishes, and is considered very auspicious in France. We named our shop with the hope that customers will have a rich time by savoring our cakes.

Each cake is like a jewel

The pastries created by the owner and pastry chef, Eberle Bernard, are like luxurious jewels, and he is particular about the ingredients he uses.

-Please tell us about your cakes.

Bernard: "We make our cakes every morning using seasonal ingredients. Shizuoka is a treasure trove of ingredients. We change each cream and tart dough to match the fruit.

Moreover, we value simplicity above all else. In order to allow you to appreciate the artisan's skill, we eliminate all unnecessary ingredients and create cakes that allow you to enjoy the flavor of the ingredients themselves.

Even in France, there are fewer and fewer artisans who steadily create French pastries from the basics. I want to continue to bring the best French pastries you've ever tasted to the people of Japan.

We actually bought it

When we were wondering which one we should choose, Mr. Bernard said in fluent Japanese, "I recommend all of them from here to here!" He soothes us with his fluent Japanese.

After listening to their recommendations, we chose five different cakes! Each one is an easy-to-eat size, so two people can enjoy several different types while sharing.

There are also baked goods on display in the store, so you can choose your favorites and give them as gifts.

Strawberry Shortcake "Diplomat"

"Diplomat" is a beautiful and elegant strawberry shortcake. The cream is somewhere between fresh cream and custard, and it's not too sweet, so you can eat as many as you want.

The most popular "Supreme"

The most popular item is the "Supreme." Made with the highest quality vanilla, the light and fluffy vanilla cream has a refined sweetness. It goes perfectly with the dacquoise pastry made with hazelnuts and almonds.

"Chocao" that you can enjoy rich chocolate

This hair salon has an overseas atmosphere, with the owner's personality shining through in the interior decorated with British antique furniture.
