Mr. Morimoto opened his workshop in 2002, about 17 years ago. After training in Germany, he opened a business in his hometown. What inspired you to start making hams and sausages?

Mr. Morimoto: “The first reason was that my uncle ran a pig farm. After graduating from university, I came across a sausage. I got a job at a processing company.

I'm a little stubborn, and I'm not satisfied if I start pursuing one thing. 'Real sausage tastes better.' I was caught up with that comment.

About a year later, my mentor told me that if I wanted to make real sausage, I would have to go to a pig farm to do it. He told me that if I wanted to make real sausage, I had to learn how to feed pigs! I was told. I decided to go to Germany for training.

Mr. Morimoto: "I went to Alsfeld in Germany, which is also the hometown of Little Red Riding Hood. I learned how to raise pigs used for ham and sausage from scratch while staying at a pig farmer, the Schmidt family.

What surprised me was the sound of the sausage. Until then, I thought sausages with a crisp sound were delicious. However, none of the sausages I ate in Germany, where I trained, made a sound. ”

Mr. Morimoto: “This is because we do not deceive ourselves with the texture of the skin. At Morimoto Koubou, we want our customers to be able to enjoy the richness of the meat itself, so we use natural sheep intestines that have thin skin and are soft. , 'No crisp sound'. This is one of the important things I learned from the Schmidt family.

That's not all. The Schmidt family spares effort when it comes to their carefully raised pigs. Many places claim to make handmade sausages, but in reality, they leave the work to machines. However, we do everything by hand in order to preserve the process that has been handed down in the Schmidt family.

Check the condition of the meat with your hands. Differences in temperature and natural environment depending on the season. Little things change the growth of pigs little by little, so I check the meat quality with my own hands to bring it to the best condition. ”

The growing environment and the thoughts of the producers

Mr. Morimoto: "We try to select the pork we use by taking into consideration the growing environment and the producer's thoughts. To be honest, even without cutting the meat, I can tell just by looking at the cross section that the feed has been changed, and I can even tell the character of the producer.

As I was thoroughly trained by the Schmidt family to plow the fields day in and day out, clean the piggery, care for the pigs, and even identify the meat quality of the pigs, I became able to understand not only pigs, but all kinds of animal ailments."

Mr. Morimoto: "Of course, people are animals too, so I can tell if someone has a sore back, or if a staff member's shoulder is sore because of their movements. I've even been told that I should become a chiropractor (laughs)."

Mr. Morimoto: “I learned a lot from the Schmidt family. Another thing I value is "making something for someone else". The Schmidt family sold ham and sausage by going around to houses where they received orders and handing them directly to customers.

No matter which house I go to, everyone is smiling and looking forward to the arrival of ham and sausage. I realized that creating the real thing was to create something for someone's smile. It's not enough to just create. It's important to make something for someone else. ”

Mr. Morimoto: "Also, the town in Germany where I lived is a very nice place with a nice climate, but I suddenly realized that if you look closely, isn't this the same as the town of Ibigawa?" .

It was about 17 years ago that I came back to my hometown and opened. Thanks to you, I have received a lot of happy words. However, I will continue trial and error toward the development of new hams and sausages. ”

He plans to start operating a pig farm next year. Morimoto's momentum is still unstoppable.
