[Navi Design] Gifu, Tajimi's Patisserie "GRANDIR" Offers Authentic French Pastries!
NAVI Designis a design office located in Toki City, Gifu Prefecture. They are involved in the design and renovation of commercial facilities and stores, mainly in Gifu Prefecture.
We will visit stores that NAVI Design has worked on and introduce their charms. In this second installment, we introduce “GRANDIR,” a very popular patisserie in Tajimi where you can enjoy authentic French pastries.

GRANDIR(グランディール)があるのは、岐阜県多治見市宝町。1997年にこの地で創業して以来、地元のみならず、遠方のお客さまからも愛されるお店です。
The shop is located a 12-minute walk from Koizumi Station on the JR Taita Line, or a 10-minute drive northwest from JR Tajimi Station. There is a spacious parking lot with a 14 parking space.
The modern and sophisticated exterior, based on a black and white theme, has a dignified appearance reminiscent of a street corner in Paris.
The first thing that catches your eye when you enter the store is the showcase displaying cakes. Sparkling cakes and baked goods are beautifully lined up.
The first floor is a shop and workshop, and the second floor is a semi-private cafe where you can enjoy tea and cake.
GRANDIR uses only carefully selected ingredients to create simple, carefully crafted sweets based on French pastries. They also have a wide selection of whole cakes for events, seasonal cakes, and baked goods that are perfect for gifts.
Authentic French pastries
After training at a hotel in Nagoya, Chef Furuta opened a store in Tajimi in 1997. Since then, it has been supported by many people, both locals and people from far away, as a representative patisserie of Tajimi.
-We asked about GANDIR's particularities.
Chef Furuta: "What GRANDIR has valued since its establishment is safe and delicious cakes made with quality ingredients. We make the most of the colors, tastes, and aromas of the ingredients and stick to the basic style of French confectionery while creating confectionery that meets the needs of the times in Tajimi.
Not only do we use carefully selected fresh ingredients, but we also carefully determine when the ingredients are ripe to bring out their natural colors and flavors, such as sweetness and sourness, to the fullest.
For example, if pistachios are used, the cake should be simple to accentuate the pistachio flavor, so that the rich aroma can be enjoyed as soon as it enters the mouth. Nuts and nuts are roasted more intensely to enhance their aroma and texture.
We use the finest chocolates from France and Belgium in our chocolates, and we pursue the best possible melt-in-your-mouth quality. In this way, we carefully create each product by maximizing the 'natural goodness of the ingredients'."
-What made you choose Navi Design?
Chef Furuta: "I met Mr. Watanabe almost 30 years ago. When I was looking for a restaurant at the time I decided to start my own business, I was introduced to Mr. Watanabe by a real estate agent who said he knew someone good.
When we actually talked with him, we found that we could not only share his good sense of style, but also his attitude and commitment to his work. I felt that I could trust Mr. Watanabe with my work, so I commissioned him to do my first store, and that was the beginning of our relationship.
Since then, we have asked Mr. Watanabe for help every time we move our store."
-Please tell us about the particular features of this store.
Chef Furuta: "This store opened in 2018. Our first store was a chic, modern store using wood, while our second store was a warm brick store inspired by a rural house in Burgundy.
For our third store, we aimed to create a modern and sophisticated store like the one in Paris. We wanted to create a place where customers could feel excited and special from the moment they entered.

-We asked Navi Design's CEO, Mr. Watanabe, about the key points of construction.
Mr. Watanabe: "This new store features a modern design reminiscent of urban Paris. We created an open, atrium-style space to lift your spirits the moment you enter the store. The all-white interior also features slightly different wallpaper designs. If you look closely, you'll see that the wallpaper patterns are all different.
Mr. Watanabe: "The second floor is designed to resemble a Parisian salon, with a classical atmosphere. The key point is that each wall has a different wallpaper and waist-high wall design.
The design may seem too strong at first glance, but it is well-organized. We also purposely did not have the same tables and chairs in the cafe space so that customers would enjoy themselves every time they come, wondering "where should I sit next?"
We sat down many times and adjusted the height of the tables and chairs to ensure a comfortable atmosphere. In fact, we have received positive feedback from customers saying that they feel relaxed there.
The toilet wallpaper is also very nice! It is different for men and women, so be sure to check it out when you visit the cafe space on the second floor.

A popular cake since the restaurant first opened! The signature dish, "Mille-feuille aux Fraises"
It has a great visual impact! This has been a signature dish created by Chef Furuta since the restaurant first opened. It is a very popular item, with rich cream and strawberries sandwiched between fluffy, crispy pie.
Many people come from far away just to try this mille-feuille aux fraises.
This dish is best enjoyed on the spot, so it's definitely one to try at the cafe.
Italian pistachio "Clore"
This cake is made with cream made from the finest milk chocolate from Valrhona of France, homemade caramel sauce, and wrapped in Italian pistachio mousse.
The langue de chat cake on top and the rich taste of pistachios are irresistible. If you want to eat the best pistachio cake, please try this one.
Rich chocolate is amazing! "Chocolat de pere"
"Chocolat de pere" is a must-try for chocolate lovers. It is made with Valrhona chocolate from France and contains two types of chocolate: "Manjari", which has a bright and sour red berry flavor, and "Lacte", which has a rich aroma of cacao and vanilla.
The deep aroma of coffee and the fresh and elegant acidity of cherries are added to the cream, and cacao nibs enhance the texture of this cake for adults.
"Bouquetière" - the exquisite scent of blueberries and vanilla!
This cake is made with crémeux made from “60days dark” chocolate, which is made within 60 days of harvesting cacao, and homemade blueberry confiture covered with a sweet vanilla mousse.
While clean and refreshing, the flavor of chocolate, blueberries and vanilla are a perfect match.
Branded rice “Ryu no Hitomi (Dragon Eyes)" and "Rice-flour canelé"
Canelé made from rice flour of “Ryu no Hitomi” brand rice from Gero City, Gifu Prefecture. These canelé are safe and secure, made from rice grown with reduced agricultural chemicals and without the use of chemical fertilizers.
It has a crispy, fragrant exterior and a chewy texture inside, and the gentle sweetness and flavor of rice flour fills your mouth.
This is a masterpiece that combines traditional French pastries with Japanese ingredients.

[THE GROUND MINO] Tajimi City, Gifu Prefecture
THE GROUND MINO is a complex with a concept of earth, located on Honmachi Oribe Street, a popular tourist spot in Tajimi. Comprised of multiple areas including shops, restaurants, galleries and laboratories, it is a facility where you can discover new possibilities for Mino-yaki.
The building was renovated from the site of a ceramics merchant's house built during the Meiji period, and has been reborn as a facility that preserves history while also incorporating modern elements.
[Aboo hair design] Tajimi City, Gifu Prefecture
Aboo hair design is a beauty salon planned for the second floor of a sophisticated design complex building. The cutting space is designed in the style of an adult general store, centered around a window with a nice view. The design theme is "clean casual" with a clean "white" base color. The flooring has been extended to the walls to create a sense of unity, creating a stylish space with the warmth of wood.
[French Restaurant OGUCHI] Tajimi City, Gifu Prefecture
OGUCHI is a French cuisine restaurant created by renovating a small tenant. The concept of the restaurant is simple, sophisticated, friendly, and easy to visit. The plaster walls, which the owner painted himself, create a warm and friendly atmosphere.

[Terrace cafe Oribe] Tajimi city, Gifu prefecture
Terrace Cafe Oribe is a terrace cafe with a panoramic view of the mountains, owned by Oribe Co., Ltd., located in the Mino-yaki housing complex in Tajimi City. Based on the concept of a simple yet luxurious space, it has been designed with sophistication.
