HAPPA STAND with all five senses
And in August 2017, the HAPPA STAND concept store opened in Mino City, Gifu Prefecture. An old private house built more than 150 years ago was renovated while retaining beams and other old materials. The products of HAPPA STAND, filled with Yosuke's thoughts and ideas, are on display.
Organic OCHA from HAPPA STAND
First, let's start with the organic OCHA.
HAPPA STAND's tea leaves are all grown in Ujitawara-cho, Kyoto Prefecture, where they have contracted farmers.
Ujitawara Town is the birthplace of tea. The calcareous soil is well-drained, and tea plants rooted in it are rich in minerals. In addition, there is a large temperature difference between day and night, and from early in the morning the area is enveloped in thick fog, which naturally blocks the sunlight during the day. This suppresses the production of catechin, the bitter component of tea, and produces tea leaves rich in theanine, the umami component.
HAPPA STAND's OCHA "HOUJICHA" is roasted at a very high temperature, so it has a strong aroma. It has little bitterness and caffeine, so it is easy to drink even for pregnant women and those who are concerned about caffeine. It has a refreshing taste, so it's especially recommended after a greasy meal!
There is also a powder type OCHA "KONA HOUJICHA"!
It was born from a customer's comment, "Organic powdered Houjicha tea is hard to find. It can be dissolved in hot water and used as tea, as well as for making Houjicha cookies, Houjicha pancakes, and other sweets.
Organic sencha tea is blended with an equal amount of domestic organic brown rice, which is also a superfood. The fragrance of the brown rice and the refreshing flavor of the sencha tea are well balanced.
Gyokuro is covered from the end of April to the beginning of May to block out sunlight. The result is a deep, beautiful green color, a mild sweetness, a strong umami taste, and a refreshing bitterness.
The original tea leaves have a strong umami flavor, so you can enjoy them as ohitashi by adding soy sauce to the used tea leaves or gyokuro cookies.
UTSUWA from HAPPA STAND
All ceramics sold at HAPPA STAND are Mino-yaki made from Gifu Prefecture clay. The design of HAPPA STAND is based on the idea that "we want people to drink Japanese green tea in bowls made from Japanese clay. The design incorporating a lucky octagonal shape is also a distinctive feature.
