For this interview, we asked Ryusei staff member Ms. Nishibe and chef patissier Mr. Yamashita about the concept of "Ryusei" and their commitment to making sweets in detail.

"Ryusei" is located on the first floor of the commercial facility "HOCUS POCUS" in Ginan-cho, Hashima-gun.

To access, get off at Gifu Bus "Ginancho Miyake" from JR Gifu Station and walk for 5 minutes. In addition, there is a parking lot, so you can enjoy shopping slowly even if you come by car.

-Please tell us about the beginning of the store.

Ms. Nishibe: "SANMYAKU Co., Ltd. which manages the "Kissa Sanmyaku" opened its second store, "Ryusei", in the hope that more people will enjoy and be pleased with its delicious coffee and sweets. I think it is a good thing that we specialize in take-out, allowing customers to stop by on their way home or other places. We hope you will feel free to visit us.

-The name of the shop is very nice!

Ms. Nishibe: "The origin of the name of the shop comes from the word "wish upon a shooting star ''. We named it with the feeling that "we want to deliver sweets and coffee that you want to give to your loved ones with your wishes.

The logo of the shop is very nice with a shooting star design.

The trademark of the shop was completed after repeated discussions with the Ryusei staff, led by the designer of the design company "Little Creative Center" in Gifu City. Simple and beautiful, it has an overwhelming presence and dignity.

Ms. Nishibe: "At Ryusei, we try to make sweets that bring out the best of the ingredients. We are conscious of how we can clearly express the taste and aroma of the ingredients we are trying to bring out. We also try to create sweets that express Ryusei's unique style and that can be enjoyed not only by the sense of taste but also by the sense of sight, and that can be appreciated.

“For that reason, the technique of making the most of the taste of the ingredients is important. At our store, two pastry chefs refine their manufacturing methods and techniques every day to carefully produce each and every confectionery."

Maximize the flavor of ingredients
making simple sweets

Mr. Yamashita has been a pastry chef in the Kanto region for many years. It seems that he decided to return to his hometown because he wanted everyone in Gifu to eat the high-quality sweets he tasted there. After supervising the seasonal Montblanc provided at the Kissa Sanmyaku, he is now in charge of making all sweets as a pastry chef of Ryusei.

-Tell me about Ryusei sweets.

Mr. Yamashita: “As Ms. Nishibe said, we are conscious of making sweets that you can immediately feel the flavor and aroma of the ingredients when you eat them. We try to make sweets carefully by stripping away the complicated manufacturing process as much as possible and maximizing the goodness of the ingredients we use.”

Mr. Yamashita: "When it comes to cakes, a cake that makes you want to eat another one is appealing, but at Ryusei, we value the "flavor of a single cake. We believe that one Ryusei cake will give you a strong sense of satisfaction after eating. We are happy if you enjoy the aftertaste as well."

-About semi-dried fruit

Mr. Yamashita: "We also focus on the production of semi-dried fruits used in making baked goods. We make semi-dried fruits as an extension of heat treatment rather than simply drying them. Fresh fruit is cooked in a pot to slowly remove the water content and lock in the umami flavor. By heating the fruit, the ingredients are concentrated and the original sweetness of the fruit is more pronounced than when eaten raw.

Compared to general semi-dried fruits, the moisture content is higher due to the manufacturing method, so the expiration date is shorter, but I think you can enjoy the juicy and flavorful fruit. ”

Home-roasted coffee in the Kissa Sanmyaku

At the storefront, you can take out the coffee of "Kissa Sanmyaku". SANMYAKU Co., Ltd. roasts beans from all over the world in-house and offers coffee with a special extraction method.

The original blend they offer, "1st Station (1200m altitude)," is a deep roasted coffee perfect for enjoying with cakes and sweets. A delicious cup of bliss with the aroma of coffee beans and a bitter taste.

It has little acidity and a clean aftertaste. It is a coffee that does not interfere with the flavors of any pastry, but rather brings out the best of both.

Coffee beans are ground to order. Ms. Nishibe, a certified barista, carefully drips each cup of coffee. Little by little, you can smell the aroma of freshly ground coffee beans spreading through the store.

When you pour hot water at a well-controlled temperature, the coffee beans will swell! Only the delicious ingredients are quickly and carefully extracted before the miscellaneous taste appears.
