Kiyosu Karaage Mabushi: Enjoy the Kiyosu's Local Dish which is Different for Each Store!
Hitsumabushi (chopped kabayaki eel on rice), one of the Nagoya dishes, is well-known all over Japan, but did you know that Kiyosu City in Aichi also has a local menu called Kiyosu Karaage Mabushi?
To find out what kind of food it is, we visited the restaurants that serve it! This time, we will introduce the differences between each store's karaage mabushi.

What is Kiyosu Karaage Mabushi?
Kiyosu Karaage Mabushi is a local gourmet devised by Kiyosu City as part of its efforts to revitalize the town.
Developed in December 2021 to help revitalize the region, with the cooperation of the tourist association and local restaurants. Currently, 8 restaurants (7 businesses) in Kiyosu City are participating. *Subject to change in the future
So, what kind of dish is “Kiyosu Karaage Mabushi”? Because Lord Nobunaga Oda made Kiyosu Castle his foothold in the world, and because he loved hot water, which is the origin of grilled miso and ochazuke (rice with soup), the following three rules have been established for cooking.
<Definition of Kiyosu Karaage Mabushi>
1. Serve karaage (fried chicken) with Kiyosu miso (season with seasoning or sauce)
2. Serve in the form of hitsumabushi (1) Eat it as it is → (2) Top with condiments → (3) Pour soup stock
3. Use vegetables grown in Aichi Prefecture
As long as you follow the above rules, you are free to add anything else! This time, I visited three of the participating restaurants. I'm going to introduce the restaurants' original karaage mabushi.
"Matsuzushi", a Sushi Restaurant with 35 years of History
Matsuzushi is located in a corner of a residential area in Kiyosu City. This is a sushi restaurant that has been in business for 35 years, but the second-generation owner wanted to liven up the local community, so he participated in the project.
There are many seats in the store, from counters to tables to tatami mats, depending on the scene.
"Ikusa mabushi" where you can enjoy two different flavors
Matsuzushi's karaage mabushi is "Ikusa (battle) Mabushi (1,200 yen)" where you can enjoy two kinds of fried chicken. Why "Battle"? Kiyosu is also close to Kiyosu Castle, which is said to be the castle of Nobunaga's career.
One of the fried chicken is made with a sweet sauce made with a local miso maker's "Masukan miso", and the other is mixed with a homemade sweet and sour sauce, so you can enjoy two different flavors. First of all, enjoy each taste as it is.
Next, top it with homemade tartar sauce. Homemade sauce with onions and Kiyosu parsley for a refreshing finish. It goes well with fried chicken and goes well with rice.
At the end, we will pour soup stock over it. The elegant dashi stock and the richness of the chicken oil give it a slightly different finish.

With new challenges, the number of customers we have never seen has increased
"Matsuzushi" is run by the father who is the first owner and Mr. Goto, the second owner. Mr. Goto is a chef with a background in Japanese cuisine, so this was his first challenge with fried chicken. Perhaps because of that, they began to serve Ikusa Mabushi, and it seems that young people and new customers on weekends have increased.

"Coffee and Bread Shop Mocha"
Next is "Coffee and Bread Shop Mocha" (hereinafter "Mocha"). It is a coffee shop with a cozy atmosphere that makes you feel like you are at home.
Homemade and plenty of vegetables "Ishiyaki Healthy Mabushi"
At Mocha, they offer the “Ishiyaki (grilled in stone) Healthy Mabushi (950 yen)” with plenty of bibimbap-style vegetables. A healthy fried chicken dish made with locally grown vegetables such as carrots and spinach, and crispy fried chicken made with rice flour. *With coffee or tea
Because it is stone-baked, the charred rice is also fragrant! By the way, the rice is 16-grain rice. You can enjoy it as it is, or you can accent it with yuzu pepper and nori seaweed, and enjoy the sizzling sound of dashi at the end, which is unique to stone grilling.
For the dashi stock, they carefully boil each kind of vegetables in the bonito stock and take them out. By adding a little oil from the fried chicken, the flavor of the vegetables and the richness of the chicken are combined to create a dashi stock. Finally, add salt to taste. In addition, yuzu pepper and pickles are all handmade.
In addition to the standard menu, there are dishes that are particular about handmade. All cookies and bread are handmade! If there is a request from the customer, he often makes it in response to it. There are plenty of types, and this alone will give you a sense of the time and effort.

Mocha will be in its 16th year this year (2023). The owner, Ms. Kaneshima, has been running the restaurant all by herself since it opened. Without advertising at all, word of mouth alone has led to today, and now it is also a place for people in the neighborhood to relax. In addition to Ms. Kaneshima's personality, Mocha's cuisine is homely and has a warm atmosphere that makes you feel like you've returned home.

Cocoichi No. 1 Store!
"Curry House CoCo Ichibanya Nishibiwajima Branch"
The last place we would like to introduce is “Curry House CoCo Ichibanya”, which is known as “cocoichi”. It is a major curry chain with 1,215 stores in Japan and 208 stores overseas (as of the end of February 2023). This time, we visited the Nishibiwajima store, the first Cocoichi store.
The "Ichibanya Memorial Hall" is built on the second floor of the store, and it seems that many Coco Ichi fans from all over the country are visiting along with the first store.
Only available at 2 stores! Fried chicken glazed with spices
Cocoichi's karaage mabushi is characterized by a combination of fried chicken and curry with a spicy dashi stock. The fried chicken is based on the local Kiyosu-produced miso “Tsukemiso Kakemiso” and is finished with a sauce that is a mixture of “Taiyo Sauce” and “Taiyo Ketchup” from the same local manufacturer.
Next, add condiments to change the taste. Surprisingly, wasabi is the condiment? ! At first, they tried it with mustard, and after repeated tastings, they finally arrived at wasabi.
According to the eating guide, it seems that the dashi soup is added at the end, but does curry and dashi soup go well?
In general, I think that "dashi = Japanese" image, but the main ingredients of Cocoichi's dashi are more than 10 kinds of herbs, peppers and chili peppers. At the beginning, the restaurant had to repeat trial and error many times with Japanese soup stock. In the end, I came across the "spiced dashi crumbs" that came out in the process of making the Taiyo Sauce used in the sauce, and completed my original dashi.
I wanted to make a limited original product
"Even though it's the first store, we didn't have any difference from other stores, so we wanted to create original dishes," says Ms. Osawa, a staff member of the first store. She is a staff member who has the title of star, which is recognized as the highest level in customer service in the company.
“I wanted to create a product that could only be eaten here for customers who came to the first store from all over the country.
True to her words, they repeated trial and error many times, and after the president's approval, we completed the project. Such loving and passionate karaage mabushi is offered only at the first store, Nishibiwajima store and Aichi Kiyosu store.
