More than 120 types of Bread are Lined Up! Suburban Bakery
“Bakery SUNtoF” opened in April 2022. It is a suburban bakery located in Minato Ward, Nagoya City, near Aeon Mall Nagoya Chaya.
There are about 50 parking lots, so access by car is perfect.
When you enter the store, you will be greeted by a lot of bread with a fragrant aroma.
They have a wide variety of products, including soft and hard bread, side dishes and sweets.
In order to deliver freshly baked bread at any time of the day, the baking process is divided into multiple batches. During the interview, the staff kept replenishing the supply of freshly baked bread one after another.
The atmosphere is bright and open, with a view of the bread being made in the back of the store. The bakery is popular with customers of all ages and bakes approximately 3,000 loaves on weekdays and more than 5,000 loaves on weekends.
The dine-in space is also substantial. In addition to inside the store, you can also enjoy freshly baked bread on the bench or on the terrace in front of the store.
Another nice point is that you can enjoy specialty coffee at a reasonable price of 100 yen.

Thoughts on Opening a Bakery
“Bakery SUNtoF” is operated by Fuji Service Co., Ltd., which mainly undertakes general electrical work. We asked Mr. Kenta Ito, the representative, why an electrical construction company decided to open a bakery which is a totally different industry.
Mr. Ito: "Since our company was established in 2002, we have provided services that are close to everyone's lives, centering on the electrical construction business. Initially, we only contracted air conditioning construction, but we have incorporated customer feedback and needs, and have begun to develop various businesses such as solar power generation systems.
Among them, I wanted to revitalize the city with the power of electricity, and I wanted to contribute to the SDGs and carbon-neutral society. Therefore, we have launched this model that makes use of the solar power generation business that we have cultivated. ”
The concept is "Freshly baked bread from the sun". The store name “SUNtoF” is a combination of “SUN” for sunlight and “toF” for “to, efu”. The name comes from the mascot character "F-chan" (from Fuji Service's F).
The roof of the store is covered with solar panels, which convert the energy from the sun into electricity, which is used as part of the store's electricity.
SUNtoF bakery bakes up to 10,000 loaves of bread a day, using energy generated by solar power to bake about 1,000 loaves on sunny days.
A monitor is installed in the store, and you can see the amount of instantaneous power generation in real time and how many breads have been baked using that power generation.
Bread Baking that Values "Texture" and "Melting in the Mouth"
Mr. Motoki Murase, who is in charge of the bakery business department, supervises the bread of "Bakery SUNtoF". Mr. Murase, who has been honing his skills in the bread industry for more than 10 years, met President Ito by chance through an acquaintance when he was retiring from his previous job.
Sharing President Ito's aspirations, Murase joined Fuji Service in 2019, and together they set up the bakery from scratch.
Bakery SUNtoF has 120 to 140 varieties of bread on display throughout the day. In order to optimize the taste and texture of each bread, they carefully select and mix the best ratio of flours from a whopping 15 varieties.
Mr. Murase: “For example, if we use rye for Campagne, we blend two types of rye that are ground differently. We care about the texture THAT much.
Another important factor in bread making is the melt-in-your-mouth texture.
Mr. Murase: "We focus on making bread that, when you eat it, you can swallow without a drink. We focus on making it so smooth in the mouth that it disappears as you eat it."

In addition, there are many filling menus such as curry bread and sandwiches with chunks of beef. On the day we visited for the interview, new breads for spring had appeared.
