About 10 minutes on foot from Kurokawa subway station. "pánem ite ultra" (hereinafter referred to as "Panem")is located in Kita Ward, Nagoya City, facing Route 41. Opened in September 2022, this is a fashionable bakery with a trademark of panda that catches the eye.
As soon as you step inside the store, you are greeted by the aroma of fragrant wheat and sweet butter, and the colorful breads lined up on the wall.
There are about 80 different types of bread, from baguettes to bagels, Danish pastries, and sandwiches. And the type of breads are expected to continue to increase.
This time, we asked Mr. Takizawa, the owner, and Ms. Tomiyama, the manager and baker, about their thoughts and commitment to the shop.

Open a Shop from a Chance!
Two Dreams Come True
Panem opened in August 2022. Mr. Takizawa, who originally worked in interior design, often worked on bakeries that were tenants in supermarkets, and he had a desire to someday own a shop of his own design.
However, when he wanted to leave bread making to a professional rather than himself, ge happened to meet Ms. Tomiyama. Ms. Yomiyama is the younger sister of Mr. Takizawa's college friend. From Mr. Takizawa's casual contact with a friend asking, "What are you doing these days?", he learned that Ms. Tomiyama was working at a bakery.
Ms. Tomiyama also got to know Mr. Takizawa just when she was away from bread baking, and since she had a strong desire to "return to the world of bread", they decided to open panem together.
In addition, Ms. Tomiyama was once told by her child, "When I grow up, I want to open a bakery with my mother." So now they are baking bread together!
Panem is a wonderful shop where the dreams of the two have come true.
Everything from the design to the interior was designed by Mr. Takizawa, and everywhere you look is stylish. I am particularly particular about the small window behind the bread shelf. There is a kitchen behind this, and the ingredients to be sandwiched in the bread are cooked. The sounds and smells of the live performance are transmitted, and it seems that your appetite will be stimulated even more!
“I want people to enjoy coming to buy bread,” says Takizawa. The interior and accessories are placed inside the store, and the paintings drawn by Mr. Takizawa are displayed.
Ultimately, he hopes to use GIF videos and projection mapping to incorporate tricks that can be enjoyed by children and adults alike.
Thoughts Behind pánem ite ultra
The store name is Latin for "beyond the bread". The words each means "pánem: bread", "ite: go", and "ultra: beyond, over there".
It contains the desire to create bread that cannot be seen at other bakeries, and to come up with new ideas and styles that are not bound by the bakery format.
The mascot character is actually a brown bear! ?
A character that is drawn large on the signboard of Panem. At first glance, it looks like a panda, but it is actually a brown bear. Her name is Pan-san the Higuma (brown bear), and he pretends to be a popular panda to attract the attention of his admirers.
Inspired by the word "guest-attracting panda", it is said that it is modeled on such human unrefinedness, such as pretending to be popular.
There is a large stuffed panda in the store, watching people pass by.
Bread Made with Homemade Natural Yeast
Panem has a wide range of breads such as sandwiches, bagels, Danish pastries, croissants, and baguettes.
Homemade natural yeast is used for the bread dough, which is characterized by its springy and crispy texture.
They use domestically produced wheat, high-grade wheat, original blended wheat, etc. according to the bread.
In particular, the hard bread "Boule" has a good taste and aroma of wheat, and it is a recommended product for both of them.
Ms. Tomiyama was originally a bread baker, but she seems to have acquired four bread qualifications before opening panem. That's all you can ask about the strength of the feeling "I want to make delicious bread!"
The number of types of bread is increasing day by day, and until a while ago there were about 30 types. Currently, there are about 80 types of bread, and Ms. Tomiyama says, "I can't keep up with the pace of making bread, but I have many ideas for bread I want to make!"
Sweets Made with Safe and Secure Ingredients
Panem also sells baked goods such as rusks, donuts, scones, and canelés. Domestically produced flour and cane sugar are used for baked sweets. Even for items imported from overseas, we check sales routes and other factors, and carefully select only items that we believe to be safe and secure.
From her own experience raising children, Ms. Tomiyama says, "I'm concerned about the ingredients and additives in food, so I'm particular about making baked sweets safe to eat and gentle on the body."

There are too many attractive breads to choose from! Mr. Takizawa and Ms. Tomiyama have selected the recommended bread for those who say. There is also a new bread that was just born on the day of the interview. If you see it at a shop, please try it.
Boule
The bread that panem recommends with the most confidence. Because it is a hard bread, it looks hard to bite at first, but it is chewy when you try it! Generally, dough is made from wheat, but panem uses rice flour. Therefore, even though it is bread, you can feel the taste of rice.
If you warm it up in the oven and eat it, the aroma and flavor will stand out.
Sausage Baguette
A popular bread that is highly supported by the staff. Crispy on the outside and moist on the inside, the juicy coarsely ground sausage is the perfect match. The black pepper is just the right accent, and once you try it, you'll be hooked.
Pistachio Krone
Luxurious bread filled with pistachio cream all the way to the edge. If you take a bite, the richness and gentle aroma of pistachio will spread in your mouth. When you hold it in your hand, it feels heavy and has a great texture!
Chausson
This is a crescent-shaped apple pie. Domestic wheat is used for the pie crust, and it is carefully made over 3 days. The canelé is characterized by its chewy, moist “raw texture”. It has just the right amount of sweetness and the aroma on the surface is irresistible.
