– What is your most memorable moment when you opened the restaurant?
Ms. Shiga: "I started the restaurant by myself. At the time, I did not advertise anything and was worried whether customers would come everyday. But when I first opened, I saw a scene of people eating kawara soba in a popular TV drama. People started asking, "What is this dish?" The number of customers who wanted to try it increased rapidly! The drama was the catalyst for more and more customers to come to my restaurant.
Ms. Shiga: “When I was completely alone, my friends, children, and their classmates in the town started helping me, and now I am a member of the staff. Everyone has helped me to make this store what it is."
– The atmosphere of the restaurant is also nice.
Ms. Shiga: "Originally it was a bicycle parking lot, but I met with an architect and decided on this space while discussing what I wanted the store to look like. I did everything I could while painting the walls and interior myself."
Ms. Shiga:"Also, because I like antiques, I prepared the tables and chairs myself. As I continue to operate the store, I update it every day by adding new things whenever I think, 'I want it to look like this.'
The concept of the space is "nostalgic, unpretentious space". I imagined a calm shop where everyone from children to the elderly can get used to. ”
– The illustration of the chopstick bag and the illustration of the menu inside the store are also cute.
Ms. Shiga: "I wanted to create an 'enjoyable' and 'exciting space' for the customers who come all the way here. So I thought, if there was a nice design on the chopstick bag, it would be kind of a relief."
Ms. Shiga: "That is when I started drawing illustrations by hand, and I have been doing it for more than three and a half years now. I hope that by drawing illustrations on each and every chopstick bag, I can bring a little fun to everyone."
- It's an exciting and fun space, and the food is full of the live atmosphere of kawara soba. The restaurant is filled with Ms. Shiga's thoughts and feelings.
Mr. Shiga: "At the core of our business is how much we can and want to meet our customers' expectations. We strive to create an exciting and enjoyable restaurant based on the principle of 'never disappoint expectations' for all our food and drinks.
The other day, one of our regulars told me that it was the third time to come here this month, which made me very happy. I would like to create a restaurant where everyone, from small children to the elderly, can feel free to come and enjoy our food.
