The originator of Taiwan ramen, this Chinese restaurant has been a favorite of Nagoya people since its establishment in 1960. There are 8 branches in the city of Nagoya.

The five brothers who founded the restaurant manage each restaurant separately, so each restaurant has its own unique characteristics. Even the Taiwan ramen, their signature dish, has a slightly different flavor, so be sure to compare the different tastes!

Taiwan Ramen ¥750

Let’s start with the famous “Taiwan Ramen.” Taiwan ramen does not actually exist in Taiwan, but is a Nagoya original ramen popularized in Nagoya.

The chicken broth is filled with chili peppers and garlic, and the umami taste of minced meat spreads out. Despite its spiciness, this is Nagoya’s soul food that will keep you coming back for more. It can be made a little milder by adding a raw egg.

Taiwan Ramen “Koyo” Appeared in a Popular TV Drama

Taiwan Ramen Koyo is located in Hira, Nishi-ku, Nagoya City. It is a thriving restaurant loved by the local community and was featured in the Nagoya business trip episode of the popular TV drama “Kodoku no Gourmet” (Gourmet of Solitude).

It is a Chinese restaurant that offers a wide variety of a la carte dishes, including its signature menu item, Taiwan Ramen.

We recommend the “Goro-san Set” (¥2,035), which offers the menu the main character Goro-san ate in the play. It is a generous portion, so it is just right for two people to share.

Taiwanese ramen is available in five levels of spiciness, from “American” to “Geki-kara (extremely hot)”.

This time, I had the normal version, which is made from 40% chicken bones and 60% pork bones, and it is moderately spicy. The flavor of soy sauce can also be felt. The slightly hard noodles and minced meat stir-fried slowly are a perfect match!

There are three types of Taiwan ramen: salt, soy sauce, and Okada-flavored (miso-flavored base).

Okada Taiwan Ramen ¥770

This time, I tried the Okada flavor.

The red miso-based soup is tangy and spicy, with a strong miso flavor and mildness. It is topped with plenty of minced meat, chili peppers, chives, and garlic. Sliced garlic is added to the soup for an instant punch!

It is different from the Taiwan ramen you usually eat, but somehow it has a calming and gentle taste. The miso base is good for the cold season!

Another must-have at “Ramen Okada” is Karaage (fried chicken)!

The Karaage (large) comes with 12 generous pieces of Karaage. The batter is crunchy, and it is served simply with salt and pepper. Both adults and children love the taste. If you have leftovers, you can take some home in a pack for an extra charge.

Fried rice is the most popular accompaniment to Ramen, but the “Tenshinhan” here is also excellent.

Taiwan Ramen ¥740

Taiwan ramen is usually characterized by its spiciness, but Koryu’s Taiwan ramen comes first with the flavor of the broth.

The secret is the fragrant minced meat. Instead of pursuing spiciness, Koryu emphasizes the overall balance of the soup. It goes well with the slightly sweet and slippery noodles.

Koryu’s popular menu item is “garlic fried rice. It may look simple, but the crispy rice and plenty of garlic give you great stamina. The spiciness can be adjusted to your liking.

The Bold Slices of Pork are Irresistibly Delicious! “Taiwan Ramen Eraku”

“Taiwan Ramen Eraku” is located in Moriyama-ku, Nagoya City. It is a long-established Taiwan ramen restaurant that has been in business for more than 25 years.

ERAKU’s popular menu item is the “Thick Meat Taiwan Ramen” topped with extra-thick slices of pork. The tender soup, which contains the flavor of vegetables, goes perfectly with the chewy texture of the noodles! Crunchy bean sprouts, chives, and spicy minced meat are quickly stir-fried to accentuate the flavor.

The garlic is used to give the soup a punch.

The extra-large piece of Chashu pork is surprisingly tender and can be loosened with chopsticks. We were worried about whether we would be able to eat this much, but it was a piece of cake.

You can add toppings to any ramen for an extra 450 yen.

Taiwan Mazesoba, which was a limited time menu item, has become a regular menu item. It is served with a raw egg and ingredients well mixed together. The noodles are medium thick and curly, so they are easy to eat.

“Jinsei Gyo-za” where You can Taste “Sara Taiwan” – Taiwan Ramen without Soup.

The “Sara Taiwan” can be tasted at the Chinese restaurant “Hachiken ROCK Jinsei Gyo-za” in Hachiken-cho, Nakagawa-ku, Nagoya City. It is a popular restaurant where people are prepared to wait in line.

Here is the famous “Sara Taiwan”. You can choose the amount of spiciness & garlic. This time, I ordered “Normal” for both.

Stir-fried bean sprouts, chives, and minced meat are covered with so much that the noodles are hidden from view. There are also plenty of sliced chili peppers! The noodles are served with medium-thick noodles that have a firm texture. The spiciness and the punch of garlic give the dish an addictive flavor.

There are chili peppers on the table and the spiciness can be adjusted, so if you are worried about spiciness, you can choose “moderate” or “medium spiciness”.

A generous piece of Chashu pork can be added as a topping for 180 yen. The pork is so tender that it will fall apart with chopsticks.

I also ordered “fried rice” and “dumplings.” Both are simple, but they are the best match for the spicy dish Taiwan!

The best of all is the “Chicken Tempura,” which is available only on Saturdays and Sundays. Tender, aromatic chicken meat is wrapped in a crunchy batter. It is one of the best chicken tempura I have ever eaten. If you visit on the weekend, be sure to try it!
