Freshly wrapped dumplings are irresistible!
Gyoza Specialty Store "Gyoza New Fushimi"
"Gyoza New Fushimi" opened in Fushimi, Nagoya in November 2020. This is a new branch of Gyozamania, a Michelin Bib Gourmand gyoza specialty store that all gyoza lovers visit.
The signature menu item is the exquisite gyoza, which is kneaded and wrapped after receiving an order. This is a faithful reproduction of the taste that the owner fell in love with in Beijing, China. It seems that the base of how to make it was taught by a local person, and it was finished with an original technique.
The secret to their popularity is the “freshly wrapped” dumplings, which are made by stretching the skin after receiving an order. The aged homemade skins are used separately for pan-fried gyoza and boiled gyoza.
If you visit Gyoza New Fushimi, this is the dish to start! There are two types of baked gyoza: vegetable and meat.
Freshly wrapped dumplings have a chewy skin! You don't even need to add anything, and the umami spreads in your mouth.
There are 4 types of boiled gyoza: shrimp, coriander, perilla, and green pepper. They use homemade skins for boiled dumplings. Green peppers are especially recommended! The crunchy texture of the peppers and the springy texture of the homemade skin are the perfect match. In China, it is said to be the taste of home.
In addition to gyoza, there are plenty of menu items other than gyoza, such as "baked cold noodles", "mouth watering chicken", and "foreign crispy peppers".

“Taki-gyoza and Kyushu charcoal-grilled bar Haretoki” is located in Izumi, Higashi-ku, Nagoya.
This is a restaurant where you can enjoy Kyushu gourmet dishes made with ingredients carefully selected by the owner from Fukuoka. While in Nagoya, you can enjoy authentic Kyushu gourmet dishes such as the famous "taki-gyoza'', the extremely fresh "basashi", and the precious "Tsushima wild boar".
Haretoki's specialty, "taki-gyoza", is always requested by visitors. Over the past few years, it has slowly gained popularity as a new specialty of Hakata.
At Haretoki, the dumplings are prepared from the skin with a unique formula that took 7 to 8 years to develop, and then cooked all at once in a rich broth slowly simmered with chicken stock. The red yuzu kosho (yuzu citron pepper) gives the dumplings a different taste.
The skin is very chewy, and even if you pick it up with chopsticks, it won't fall apart easily. It is said that there are many people who are asked to finish the meal with this dish after drinking alcohol. After eating, you can enjoy as champon (dish of noodles with seafoods and vegetables)!
