Today, we interviewed Mr. Miyake, the owner of the organic food truck Shanbara.

– Please tell us how you started the food truck.

Mr. Miyake: "The first time I held a kitchen knife was when I was 6 years old. I have loved cooking since I was little. When I was a student, my part-time job was in the kitchen of a restaurant.

This may be a bit off topic, but when I was working as a dance instructor, there was a period when my performance dropped dramatically. At that time, I thought that if I improved my personal life, something would change, so I reviewed my eating habits.

I thought it would make my body lighter and improve my dancing. I have many friends who are vegetarians, and they are all very healthy, so I started a vegetarian diet without any knowledge. I chose vegetables and other ingredients at random. I didn't know I had to supplement nutrition from other foods instead of eating meat and fish, but as a result of eating only vegetables, my face turned pale, my dark circles got worse, and I fell ill. I started it for my health, but...it was a complete disaster. I couldn't even dance. I was completely undernourished."

Mr. Miyake: “After that, I had the opportunity to go to Mt. Fuji and had a meal at a mountain hut at the foot of the mountain. This is the moment when I became obsessed with pesticide-free vegetables. When I ate it, I was filled with power, and the original taste and texture of the vegetables were exceptional. You can see that your body is happy. Even the same dish can be so different just by using different ingredients. I was really shocked. I have heard that "what you eat is what makes your body tomorrow," and I have experienced first-hand how important the selection of ingredients is. After that, I became interested in ingredients that are said to be good for health, such as pesticide-free, additive-free, and organic (organic agricultural products), and started studying on my own.

As I studied, I gradually came to think that I wanted to share the power and excitement of this food that I had experienced, and that I wanted various people to taste it. It was one of the big reasons why I decided to start a food truck that specializes in healthy and healthy food.

I'm not a vegetarian now (laughs), but by experiencing vegetarianism without knowing it, I learned the importance of 'food'. Now I am broadening my horizons while accepting both the good and the bad. "

Mr. Miyake changed his mind about food and started a food truck. It seems that he always thinks about the health of the people who eat it when he cooks. He said that he is happiest when customers say, 'It's delicious,' and smile.

Mr. Miyake: "This food truck was self-painted for both the exterior and interior, and I did DIY where I could. I wanted to cherish the environment where I work and cook, so I painted the interior with plaster, which has excellent airtightness. Plaster is good at preventing odor and moisture. I hollowed out the top plate so that sunlight can enter. On days when the weather is nice, the sun shines through, so it feels good while I'm working."

The interior of the car, which is based on white plaster and wood, has a natural and warm feel. Nice retro atmosphere.

-What do you think of the menu?

Mr. Miyake:“Our menu is determined by the ingredients we purchase. We want to serve the tastiest ingredients of the season in a way that brings out the best of the ingredients, so we have a standard menu, but we change the menu for each day we open a restaurant.

I put a lot of love and care into each dish, thinking about the customers each time I make it. It may be invisible to the eye, but I think this is a very important spice in creating delicious food! I don't know how to put it, but there are many things that taste good without being particular about the ingredients, and there are many things that taste good even if they are prepared just right. But that is not the point of my food truck. There are many customers who come to my restaurant in search of healthy food. That is why I try to serve safe, delicious food that draws on nature's bounty, one by one, with care and attention."

Mr. Miyake: "I purchase vegetables from Agurin-mura in Nagakute city and from pesticide-free farmers I know. I also try to choose foods that are as stress-free as possible."

For example, the chicken I use is Ena-dori. Ena-dori is a young, healthy chicken raised in a lush natural environment with good hygiene management. From the time they are chicks to the time they are shipped, they are raised without the use of any antibiotics or antibacterial agents. The birds are raised in a spacious and comfortable environment so that they can run around and exercise as much as possible without causing stress. The meat is characterized by its low fat content and elasticity, making it very juicy and rich. For the meat we use at our restaurants, I first check how the meat is raised and make sure to use only brand-name meat.

I want vegetarians to enjoy meal, so all menus can be prepared vegetarian. In that case, I use soy meat as an alternative to meat and provide it. "

Shanbara's special spice curry is perfected after hundreds of times of trial and error by blending spices in units of a few grams. When blending spices, it is also a point to use the skin fat of Ena chicken. A very fragrant and deep rich spice is completed.

The mellowness of the butter and the special spice combine to make one bite, and then another bite, and another bite...you won't be able to stop eating it.

The saffron rice, which is fragrant and bright yellow, is also handmade by Mr. Miyake. Depending on the type of curry and the event being held, fermented brown rice may be used instead of saffron rice.

The butter chicken curry uses the Ena-dori chicken that I mentioned earlier, and the more chewy it is, the more delicious it is. The spices are also soaked and very delicious.

On the other hand, the one with paprika is curry with red lentils and seasonal vegetables.

I am not a fan of beans, so I was a little apprehensive before eating it, but when I tried it, I could finish it without any bad taste peculiar to beans. This delicious tomato-based spice curry has a rich vegetable broth from the slow cooking. The fresh bell peppers are very sweet, and when mixed with the roux, they add a new crispy texture to the dish.

A very luxurious dish where you can enjoy two kinds of curry at once.
