Careful bread baking that makes the most of the ingredients

The store name "terre a terre" means "from earth to earth" in French.

Based on the concept of becoming a bridge between the land of the producer and the land of the customer, the idea of connecting the producer to the customer through food is included.

We asked Ms. Sayuri Takeuchi, who has been working since the opening, about her commitment to making bread.

Ms. Takeuchi: "We don't use preservatives or additives as much as possible, so we make our products small enough to eat. We also value the cute appearance of our products, and our staff members come up with ideas together through a process of trial and error.

The most important thing is to make the most of the ingredients. All of our breads are made with domestically produced wheat, and the vegetables and fruits used in our breads are purchased from reliable producers and carefully baked in-house. The cream and ganache are all handmade in the store. ”

Depending on the characteristics of the bread, they use carefully selected wheat flour from Hokkaido and Kyushu.

The baguette uses ancient wheat, which is the original breed of wheat, to create a chewy yet hard dough. Perfect with Western dishes.

In the kitchen, behind glass, is a millstone for grinding wheat. For some breads, wheat is milled and fresh flour is used. The delicious breads at terre a terre are created by facing each ingredient and carefully extracting its umami and aroma.

At the cafe on the 2nd floor, you can enjoy the bread you choose from the showcase with a drink. Compared to before, the number of seats has been reduced to half, and there are 4 table seats.

When I asked Ms. Takeuchi for her recommendations, she said ripe Tubu-Tubu mandarin orange juice and black tea. Tea serves organic Assam from Makaibari Farm. It seems that it is a special tea leaf that is harvested on the day of the full moon, which is rich in nutrients.

Second store opened in Handa City!

In August 2020, the second store, the Handa store, opened.

It has a natural atmosphere different from the Takaoka store, and the cafe space is spacious. Plenty of sunlight and a sense of openness.

Although there are still few types of bread, they have the same menu as the Takaoka store. Since there is a field in Handa City, she would like to gradually increase the number of breads using freshly harvested vegetables, and she talked about the future. I can't wait to see what kind of products will appear.

You can feel the rich flavor of butter and the densely layered dough. When I ate it, the umami of butter spread in my mouth and I enjoyed the crispy texture on the surface. There is also a chewy feeling inside, and I was surprised at the condensed deliciousness!

The golden ratio of butter and salt "Salt salyu"

A croissant accented with Maldon sea salt, a purveyor to the British royal family. This was moist like salyu, but also had a fluffy and soft texture. Exquisite saltiness matches the batter with plenty of butter, and the deliciousness will leave you wanting more! I want to eat another one.

Cream bread "ferm"

A cream bun made with plenty of vanilla beans. After receiving an order, they fill the cream. The fluffy and soft dough is filled with smooth cream and looks like sweets. It's not too sweet and has an elegant vanilla bean scent.

Adult chocolate bread "Pearl Chloraccan"

The chocolate spread over the cocoa dough looks like jewelry and you will be fascinated. The combination of sweetness and bitterness, and the crunchy texture of bread and puffs is exquisite. A feeling of small-sized size is moderate, too. I would like to enjoy it with black coffee in the early afternoon.

White chocolate like a pearl makes you feel happy even before you eat it. There are puffs and ganache inside. The brioche fabric with a slight earl gray scent and the mellowness of white chocolate are a perfect match. It was delicious not to betray the appearance.

The breads were all small-sized, but packed with goodness and satisfying. It makes me want to try the quiche and the Jyako (dried young sardines) bread, as well as the Salut again. I could see why everyone wants to go back again and again.
