Ms. Sugihara:"We originally ran a coffee shop behind Nagoya Station. We now operate several restaurants around Nagoya, but we decided to start anew in the form of a café from our origins as a coffee shop.
What we are most particular about is the quality of our ingredients. Having been in the restaurant business for over 35 years, we want our customers to enjoy delicious food made with safe and reliable ingredients. We have always thought about what is good for the body and what is bad for the body. What we have arrived at is the food made with safe, domestically produced ingredients."
Ms. Sugihara:"This does not mean that we use only domestic ingredients. In deciding which ingredients to use, we tasted all of them. Even when it came to milk, we tried many different manufacturers, and there were days when we received several cases of ingredients every day. For bread, we did a lot of research to find out what texture and flavor would be preferred. We did a lot of research.
As a result of thorough research, we arrived at the ingredients of “Masa” bread. Wheat is a blend of "Hokkaido flour". The milk is from Hokkaido Hakodate Milk. In addition, we continue to pursue ingredients without compromise, such as "domestic unsalted butter" made from raw milk from Tokachi, Hokkaido, and "domestic multiflora honey" for honey. The result of our meticulous attention to detail is the 'Masa' bread. ”

Ms. Sugihara:“In addition to white bread, we also bake side dish bread every day. We have a wide variety of breads, from the standard cream bread and red bean paste bread to gapao bread and bread using Inca no Mezame (variation of potato).
