The bakery "SIBERIA" is located in Showa-ku, Nagoya, a 15-minute walk from the subway "Higashibetsuin" station. Since it opened in December 2019, it has been frequented not only by locals but also by many fans from inside and outside the prefecture.

We asked about the appeal of SIBERIA's bread and what they are particular about.

SIBERIA is located on the first floor of a brick building facing the main street. The bakery has no signboard and is marked by a large window and two antique chairs.

When you walk into the store, you will see many breads lined up on the large counter. There are always 30 kinds of bread, and the good aroma of bread spreads all over. Since it is a face-to-face sale, it is also a point that you can choose bread while enjoying conversation.

The lineup includes a wide variety of standard breads, campagnes, breads, and sweet breads. It is hard to decide which one to choose! The fun of being able to choose which one you want today is also available only at SIBERIA.

Ms. Owaki, the owner of SIBERIA. The shop was opened in December 2019 and is run by a couple. We asked him about his commitment to bread and the interior of the shop.

– Please tell us how you started the shop.

Ms. Owaki: "I trained at a bakery for about 13 years and dreamed of one day becoming independent. Then, through a combination of various coincidences, I opened the store I had longed for."

– What made you decide on this location?

Ms. Owaki: "Nothing in particular. Actually, I didn't know anything about this area in the first place, but there are parks, kindergartens, and lots of houses near the shop, so I thought it was a nice town. After opening the store, I am very happy that local people, such as mothers who take children to and from kindergartens and people who work at nearby companies, come to visit us.”

– The store name SIBERIA is impressive!

Ms. Owaki: "Thank you. Actually, it doesn't have any particular meaning, but when I was looking for words that are easy to remember and memorable, I came across the word SIBERIA and thought it would be good."

– Please also tell us about the bread you are particular about.

Ms. Owaki: "Our prided Campagne uses homemade yeast and French wheat to mature at a low temperature. Personally, I like the chewy texture of the bread dough, so that's the texture and flavor. I am committed to becoming

– It is true that SIBERIA's bread has a lot of chewy dough. I like Campagne, so SIBERIA's Campagne is superb!

Mr. Owaki: "I also love campagne. I wanted to eliminate the image of campagne as being hard in texture, so I created a soft and fluffy campagne."

– There are many kinds, and it is also attractive that there are many ingredients.

Ms. Owaki: "I like that it's stuffed with plenty of thick ingredients! It's filling and you can enjoy the deliciousness of the ingredients. If you like campagne, I'd like you to try it."

– Do you use different dough besides campagne?

Ms. Owaki:"We have 8 original dough types. We make white bread dough, soft bread, side dish bread, etc., each with their own individuality."

– As well as the bread, the interior is also very nice!

Ms. Owaki:“We have always liked cafes, so we started talking to the owner of the cafe, and after connecting with STORE IN FACTORY, we began to talk about various things. My husband and I said that if we were going to display our bread, it would definitely be nice to put it on the original shelf of STORE IN FACTORY.We also fell in love with the counter of THE APARTMENT STORE, so we asked them to make it with a similar atmosphere."

– This counter is very impressive and matches the space.

Ms. Owaki: "Thank you very much. For this counter, we were particular about the size down to the smallest details, such as the width of the bread tray and the height at which the bread is taken. I was thrilled when the counter was finally completed after many meetings."

Ms. Owaki: "I asked for a design that looks like an antique. The details are really cool."

– The view from the large windows is also nice.

Ms. Owaki: "This was originally the office of a printing company. At the time, it had a small sliding door, but we wanted to make it look cool by breaking down the entrance and inserting a large window to accommodate a large oven. The frame is finished with iron. In the evening, the lights of the bakery are outside, creating a nice atmosphere. I also enjoy the different expressions between the daytime and the evening."

– Are you making the most of the floor as it is?

Ms. Owaki: "The floor is stripped and left as is. I thought it was tasteful. The ceiling was also just stripped. What I was particular about was the plumbing. We hollowed out the glass to bring the piping outside. When the bread is baked, the aroma spreads outside."

– The illustrations on the bread are also cute!

Ms. Owaki:"My friend made an illustration with the image of us. I'm happy that it's been well received by our customers."

- What is your outlook for the future?

Ms. Owaki:"It's been a year since we opened, and I'm very happy to hear the latest news from our customers. Although it's a bakery, it feels like a coffee shop. I would like to have people choose bread while having fun while chatting, and I would like to continue to be community-based.”
