-Is it possible to talk directly with the brewers at the tap room attached to the beer factory in Nishi Ward, Nagoya City?

Yamamoto: "Yes. The taproom is open only on Saturdays and Sundays, but our brewers stand in the store to sell our regular and seasonal beers on tap. Here, we want to give customers not only a taste of the beer, but also a taste of the brewer's thoughts behind the beer. How is it possible to produce this flavor? What is different about this beer from the previous ones? and other questions will be answered by the brewer himself in his own voice. We built the taproom to be a place where brewers and customers can interact directly."

-The presence of the tap room is important as a place for communication between the customers and the brewers.

Yamamoto: "The taproom is far from the station and not in a residential area, so there are few pedestrians around, but recently we have been getting more and more people who stop by to take a walk or visit the taproom for its own sake. We also occasionally collaborate with restaurants and hold events in front of the factory.

We believe that the taproom is a place where you can learn a new aspect of craft beer through conversation with the brewers and experience a world-expanding experience. Please feel free to ask questions even if you are not familiar with beer, such as 'what is an IPA?' or 'what is the difference between IPA and pale ale?'"

-How do you want Y market to become in the future?

Yamamoto: "I don't think Y-Market is yet well known as a beer, so I want more people to know about it. I would also like more people to be exposed to 'craft beer,' including Y MARKET's beer.

Craft beer is full of the thoughts and commitments of the brewer, and there are many types, so I would like people to know that there is a world like this in beer. And I would like Y Market to be the entrance to that world.

Craft beer is a deep world as you know it, but beer is beer. I think beer is a more casual and low-hurdle drink than any other drink, so I want people to enjoy it casually. ”

-Do you have any new initiatives to start in the future?

Yamamoto: "What we are already working on now is hop production. With the help of farmers in Inabu City, we plan to harvest our first crop this summer. The amount of hops harvested increases every year, so we will start out with a small amount, but eventually we hope to use the hops we grow to make our own original Aichi beer.

We are also looking for ways to make good use of the fact that we are able to integrate upstream and downstream operations, from craft beer brewing to liquor distributors and restaurant management. For example, we could use the malt scraps (high in fiber and nutritional value) discarded in the beer brewing process as feed to raise livestock and serve it in our restaurants. It would be nice if we could do something sustainable as a company."

The white gradient style is called "HefeWeizen," an unfiltered German white beer. The aroma of bananas and cloves* and the slight bitterness of American hops are the best match. It is characterized by a flavor that can be drunk all the time.

A New Old made in the style of an "American Pale Ale" similar to the Purple Sky Pale Ale. A light to medium-bodied, clear amber beer made with old and new popular hops.
