A Chef's Commitment to Food
Next, we interviewed Chef Kashishita, also known as Cassie.
- What are the characteristics of Macy's?
Mr. Kashimoto: "It's the variety of the menu. In general, American diners often have only hamburgers and pizza, or have a limited menu. But at Macy's, we have rice, snacks, and sweets. I hope you will use our restaurant for all occasions throughout the day: lunch, cafe, dinner, bar, etc."
There was a reason for such an abundance of menus.
Mr. Kashimoto: "I have lived a life dedicated to cooking since I aspired to become a chef when I was in junior high school. I have worked in a variety of restaurants, including cafes, Japanese-style pubs, creative dining establishments, Chinese restaurants, and French restaurants. That's why at Macy's, I try not to get too caught up in American cuisine, but to use as much of my experience as possible to come up with menu items that can be enjoyed by a variety of people."

- Please tell us about your particular cooking style.
Mr. Kashimoto: "We try to make sure that our customers can enjoy good ingredients at the most reasonable price possible. For example, all of our pork is Mizunami Bono Pork, a brand of meat from Mizunami City, Gifu Prefecture. We purchase this meat by the half of whole pork and divide it into loin, bone, fillet, etc. at the restaurant. Since we do not intervene with wholesalers, we are able to offer it at a more reasonable price than usual.
And because we buy in blocks, we also think about using up all the materials. For example, I use it in hamburger patties and steak sauce. ”
