Another feature is that there is a cafe space where you can eat in, so it is a bakery that is visited by everyone from small children to the elderly.

We interviewed the store manager, Mr. Mori, about the reasons for opening the store and his commitment to bread.

What made you open?

Mr. Mori: “I was originally an apprentice at the European-style handmade bread shop “STEPEN PEPE” in Iwakura City, Aichi Prefecture. ”

Mr. Mori said that he wanted to eventually open his own restaurant while training as an apprentice.

Mr. Mori: "I was asked if I wanted to open a bakery in Komaki City. I wanted to use as many natural ingredients as possible and use no additives to make bread that I could eat with peace of mind. That is."

The first thing Mr. Mori did when he came to this place was to interact with the locals.

Mr. Mori: "While interacting with the locals and becoming friends, I learned that there are many farmers in the area who grow grapes, plums, rice, and various vegetables and fruits.

Using local, seasonal produce means that we can collect fresher natural yeast. I can make good bread. Such thoughts swelled. ”

After learning storytelling and storytelling techniques, she launched and hosted a storytelling group for local moms. Currently, she is active as a picture book and handicraft instructor at nursery schools and elementary schools. As a representative of "Forest Bookshelf", which conveys the joy of playing in the world of picture books, he plans and manages workshops and events in collaboration with picture books.

Since 2013, as an artist TORICA, he has been creating original picture books and developing solo art exhibitions.
